"According to Palestinian folklore, za'atar has the potential to increase your neurological capacity - a belief that resonates with Firyal Al Sa'di, one of the founding members of Palestine's first za'atar-making co-op. She's been packing za'atar in her kids' school lunches for years.
Firyal and the other members of her cooperative in Jalamah Village combine dried thyme, wild sumac, cold pressed olive oil and roasted sesame seeds to make this special blend. She and her neighbors like to use their za'atar for marinating meats, spicing up a bowl of hummus or spreading onto flat bread. We hope your za'atar brings you creative and culinary pleasure as well."
